I recently wrote up a blog post about Double IPA, so here is my Double IPA recipe. This recipe was designed by my friend Tom who used to run one of the LHBSs in the area – The Thirsty Brewer. He has moved on to be the head brewer at a local brewery, Inverness Brewing.
The idea behind the simplicity of this recipe is to be able to discern the aspects of each of the ingredients. The Victory malt adds a bit of biscuit/bready flavor, while the Caramel (Crystal) 60 adds color depth, sweetness and helps with head retention. In order to further show-case the malt and hops, US-05 was chosen as the yeast for its cleanliness. SafAle US-05 also creates a nice crisp product.
We want our water profile to showcase the hops for this beer, so we want our sulfates (SO4) to be on the higher side at about 275ppm conversely, we want our chlorides (Cl) to be on the lower side at around 50ppm. Calcium (Ca) around 110pm, Magnesium (Mg) around 18ppm, and Sodium (Na) around 16ppm.
In order to keep the sweetness up, we mash at higher temperature – 156 degrees F for 45 minutes and mash-out at 168 degrees F for 10 minutes.
The boil is 60 minutes, with the following hop schedule:
Chill to 68 degrees F and pitch 3 packages of SafAle US-05.
